For the cooking of our artisanal Red Label Yellow Chicken:

Thaw the chicken fully in the refrigerator for 24 hours
Preheat your oven to 180°C (350°F)
For a crispier skin, sear the chicken in a hot pan with butter for a few minutes on each side.
Place the chicken in a roasting pan, breast side up. Add vegetables like carrots and onions around it if desired.
Roast for 1.5-2 hours, basting occasionally. Internal temperature should reach 74°C (165°F).
Let the chicken rest for about 10 minutes after removing it from the oven to allow juices to settle
Serve with roasted vegetables, potatoes, or a side salad
