Melon

The “ yellow ” Charentais melon gives off ethylene, which allows it to mature in a special way, resulting in the acquisition of at least 80 scientifically measurable aromas and flavours. The so-called “green” Charentais is defined as a melon whose skin does not turn yellow when ripe.
